This is more than just a restaurant serving traditional food from this city; it is the icing on this delicious vice-regal cake which the Posada La Basilica represents and which has become a must both for hotel guests and travelers -in Pátzcuaro, who wish to sample the essence of lake cooking. A place as simple as it is charming and from whose dining room there is an idyllic view of the lake and the island of Janitzio over the red tiled Pátzcuaro rooftops.

Michoacan Corundas
Level of difficulty: Medium
Preparation time: 90 minutes
Serves: 10
Cabernet Sauvignon
Ingredients
3kg slightly ground soft corn dough
2 lt water
1kg lard
5 tablespoons baking powder
Salt to taste
30 fresh corn leaves

Mix dough with water for 20 minutes.

Beat lard until fluffy.

Mix dough with baking powder and salt.

Keep beating dough until a portion floats when placed in a cup of water.

Take the corn husk by the thicker side,

Spread two tablespoons of dough inside and fold into a triangular shape.

Once the corundas are formed, place in a steamer and leave to cook for one hour or until husks come off easily.
