The restaurant
Mirasoles is a gourmet restaurant in capital letters. The building which houses this miracle is an elegant 17th century mansion with a central location, but sufficiently removed from the cathedral traffic to ensure the enjoyment of a culinary feast that is centered round a passion for wine. Michoacán dishes or those of international inspiration, using excellent ingredients are treated with balance and tastefully presented. The crockery, cutlery and glassware as well as the service match the standard of the cuisine.

Capon Chilies
Level of difficulty: Easy
Preparation time: 20 minutes
Serves: 10
Coco Rosé from the Sinergi-vt winery in the Guadalupe Valley, B.C. Mexico
Ingredients
200 g black chili250 g Cotija cheese
125 g onions
400 g green tomatoes
5 g garlic
40 ml oil
60 ml apple vinegar

Wash and remove veins from black chili, marinate in water and apple vinegar for 8 hours.

Chop tomato and onion finely. Fry onion in oil and when transparent, add tomatoes and sauté.

Grate Cotija cheese and add to onion and tomato, mix well, taste and add salt, if necessary.

Drain chilies and fill with prepared mixture. Heat in oven for 10 minutes.

Serve with white rice and decorate with cream.
